Apple Cinnamon Oatmeal Cookies recipe

As Autumn is right around the corner, I want to share with you one of my favourite autumnal recipes - Apple Cinnamon Oatmeal Cookies. I found the recipe last year on Pinterest (it's from the blog: Sally's Baking Addiction) and I’ve been addicted to these cookies ever since. They are the perfect afternoon treat or hostess gift, especially as we transition into early Fall and apple season.

 

Apple Cinnamon Oatmeal Cookies


INGREDIENTS:

170g old fashion oats

125g all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon salt

2 teaspoons cinnamon

60g butter, melted and slightly cooled

90g apple sauce(unsweetened)

150g brown sugar

150g white sugar

1 egg, room temperature

1 teaspoon vanilla extract

1 apple, sliced




For icing, I melt dark baking chocolate/couverture and mix in half a teaspoon of coconut oil. After cooling the cookies I simple drizzle some warm chocolate over them.

DIRECTIONS:

1. The first step would be preheating the oven to 180°C
In the meantime, melt the butter. When the butter is runny, set aside.

2. Whisk some of your dry ingredients together: the oats, flour, baking soda, salt, and cinnamon.

3. Next whisk the butter, brown and white sugar and apple sauce in another bowl until combined. When smooth, mix in the egg and vanilla and stir for a couple minutes. Then pour the wet ingredients into the dry ingredients and whisk until combined. Afterward, fold in the sliced apple.

4. Now set the dough aside for 1-2 hours. I always cover the bowl with some cling film.

5. Using a tablespoon (or medium cookie scoop), I scoop the dough into balls and place them on a baking sheet. Leave at least 3-5 cm space between each cookie, as they will spread out! Before popping them in the oven, flatten the balls out slightly.

6. Bake for 15 minutes until the cookies turn light brown and set on the edges. Remove from the oven and let cool at least 10 minutes on the cookie sheet before icing.

Voilá ! There you have beautiful, delicious cookies.
